What's an Indian omelette? asked C. We were in the buffet line at the Marriott in Racine, Wisconsin the morning of a soccer tournament for our girls watching fresh omelettes being made. I found my mind wandering and per usual I had to say what I was thinking out loud. I started bragging to C. that no version of the omelette can top the Indian version. I'm still shocked it has yet to go mainstream in American. I hope to change that. In India, there are vendors on the street making it for late night party animals wanting a delicious paratha (stuffed flatbread) with their egg - likely the most delicious combination on the planet. For now, start with one to two eggs add minced onion, ginger, fresh green chiles, cilantro, cumin seeds, turmeric powder, and red chile powder or cayenne. Beat all the ingredients in with the eggs - I don't cook them separately as some do. I prefer the onions slightly crunchy. I also prefer not to add other spices - I like the pure simplicity of the cumin. If you want more, feel free to add a touch of garam masala and/or coriander powder. 


Recipe: Indian Omelette

1 egg + 1 egg white (or two full eggs)
1 teaspoon milk or dairy alternative (optional)
1/2 small yellow or red onion, minced
1 teaspoon grated ginger
2 - 3 green Thai chiles, stems removed and thinly sliced
1/2 teaspoon cumin seeds
1/4 teaspoon red chile powder or cayenne
1/4 teaspoon turmeric powder
1/4 teaspoon salt
1 tablespoon minced cilantro
2 teaspoons vegetable oil

1. Beat the eggs lightly with a fork. Then, stir in all of the other ingredients (except the oil). Add any ingredients you want - chopped kale, grated carrots, or even chia seeds. 

2. Add the oil to a small frying pan and heat over medium-low heat. 

3. Once hot, add the egg mixture. Cook 2 minutes on each side. Serve immediately with toast, a paratha, or a roti with butter and achaar or mint chutney on the side.

I have read a lot of your recipes in you book, “Indian for everyone” but has not tried one yet as I found the recipes are all for big family. If I want to cut the portion in half, can I just use half of the spices of the recipe. Please respond. I do really like your book. .
