Sabut means whole. This form of the moong bean is commonly found in Indian cuisine cooked with spices and water into a fragrant dal. It is also sprouted and even eaten as a dessert. High in protein and fiber while low in fat, it is a fantastic addition to any diet including a vegetarian, vegan, or gluten-free one.
Soak one cup of washed whole moong in water for at least 2 hours. Drain and add to a roomy pot with 2 tablespoons each minced onion, ginger, and garlic; ¼ teaspoon of turmeric powder, 1 teaspoon of cumin seeds, 1 tablespoon each of garam masala and salt, 2 teaspoons each of coriander and red chile powders and 6 cups of water. In Indian cuisine, curries are the equivalent to gravies. And, a good Tikka Masala is at once rich and flavorful. With its roots in Punjabi cuisine, this sauce balances the tartness of tomatoes with the subtlety of spices. With earthy, flavorful notes from cumin and coriander seeds, this sauce is made heartier with almonds and is a perfect backdrop to any main ingredient, whether meat or vegetables.
Cooking Tip: Gently sear meats or veggies before adding a jar of Tikka Masala. Heat through and serve with Indian bread like roti or naan or over basmati rice. It's like a soup starter - but a curry starter! Think of this Punjabi Masala as a head start for virtually any North Indian curry. In the weeks before my own wedding, my mother made buckets of this mixture so that small amounts could be pulled out for quick meals during the two-week celebration. Consider yourself now privy to the 'secret sauce' that most Punjabi families keep on hand for quick and easy meals during the week.
Cooking Tip: Heat 2 tablespoons of oil or ghee, add 1 teaspoon of cumin seeds and 1/2 teaspoon turmeric powder. Cook until the seeds sizzle. Add 1 pound of protein (paneer, tofu, chicken, beef, or pork, lamb, or fish), cook through, add 1/2 jar of Punjabi Masala, 1 cup of vegetables, and 2 teaspoons each of garam masala, red chile powder, and salt. Mix well and add 4 cups of water. Simmer 15-20 minutes until it thickens slightly and your ingredients cook through. Make the popular dish Mattar Paneer (peas and cheese) by using paneer as your protein and peas as your vegetables, following the recipe above. Serve with basmati rice, roti, or naan.

Most legumes (dal) can be found in up to four forms, sometimes making it confusing for consumers. Toor Dal is commonly used in South Indian cooking and is a great source of protein and fiber, while low in fat. When it’s split and skinned it is used in the well-known stew called Sambhar. It has a wonderfully earthy, rich taste when cooked with water, spices, and lots of root vegetables. It’s a perfect winter stew.
Bring one cup of pigeon peas (no need to soak) and 4 cups of water to a boil, turn the heat to medium-low and simmer partially covered for about 20 minutes. Add spices including sambhar powder, turmeric, and red chile powders, and salt and veggies like parsnips, turnips, kale, carrots, and potatoes. For even more flavor, heat vegetable oil in a separate pan, add black mustard seeds, and when they pop, add this mixture to your cooked stew.
