Basic Biryani (One Pot Meal)
Join Anupy for a course on how to make the classic Indian one-pot meal, Biryani. She will show you the steps and spices needed to make vegetarian biryani, and explain how to add meat and fish if you choose to do so at home. You’ll eat it like a local topped with a fried egg and spiced yogurt raita on the side. This class is vegetarian, gluten free, and can be modified to be vegan as well. We start promptly at 7:00pm at the Lincoln Park location (1550 N. Read it and Eat Class: Sambhar Powder – South Indian Soups and Dosas!

May 29: Sambhar Powder derives its origins from Southern India and is often comprised of red chilies, cumin, fenugreek, peppercorns, coriander and a yellow Indian bean called chana dal. In this hands-on cooking class, Anupy will teach students how to create this mix themselves and use it in Sambhar, a spicy lentil and vegetable stew, and Dosa, a gluten-free South Indian crepe made from rice and lentils. Students will also prepare a traditional Coconut Chutney to accompany their Sambhar and Dosa. 

Read it and Eat Class: Tandoori Masala – Tandoori Deconstructed!

June 3: Tandoori Masala is perhaps India’s most ubiquitous spice blend and typically includes cayenne pepper, coriander seeds, cumin, cloves and cardamom. In this hands-on cooking class, Anupy will explain the components of this blend and show you how to create your own Tandoori Masala. Students will then use their prepared mix to make Tandoori Chicken and a Vegetarian/Vegan Tandoori Mushroom Curry. The class will be rounded out with an Indian Flatbread to eat alongside these warming and spicy dishes.  

There are two ticket options for this Travel India series: the class alone costs $55, and if you buy all three Travel India classes (May 6th, May 20th and June 3rd) together, you can get them for a combined $148.50 (a savings of 10%). Take advantage and get a great value!

Read it and Eat Class: Garam Masala – Get Your Samosa On!

May 6: Garam Masala is a traditional North Indian spice blend often composed of cardamom, nutmeg, bay leaf, peppercorns, mace and cumin. In this hands-on cooking class, Anupy will demystify one of India’s most famous street foods. Students will incorporate this beloved seasoning into an authentic Samosa recipe, learning all of the preparatory steps along the way including: mixing dough from scratch, rolling it out, folding it and filling it with either a vegetarian mix of potatoes and peas or a meat option of spiced minced lamb. In addition to the Samosas, Anupy will demonstrate both a Mint and Tamarind-Date Chutney for dipping.
