Dark Kidney Beans

Red kidney beans (rajmah) are the essence of the iconic North Indian curry also called Rajmah. It is cooked over low heat for several hours with spices until the beans become soft and creamy. High in protein and fiber while low in fat, kidney beans are a fantastic addition to any diet including a vegetarian, vegan, or gluten-free one.
Soak one cup of washed kidney beans in water overnight. Drain and add to a roomy pot with 2 tablespoons each minced onion, ginger, and garlic; ½ tsp each turmeric and red chile powders, 1 tsp each cumin seeds and salt, 2 tsp each garam masala and coriander powder and 9 cups water.
