Making homemade nut milk isn’t complicated, but it’s a damn process. Soak. Blend with water. Strain. Reserve the milky liquid. Feel guilty staring at the nut meal you’re throwing away because you know that’s the fiber and most of the nutrients. I went through this process several times and even shared this recipe some time back. But the nut milk lightbulb literally went off one morning six months ago. That’s how many consecutive mornings I’ve been enjoying fresh, frothy, delicious nut milk in my smoothies, whereas before I was an occasional nut milk DIY’er.
Store-bought nut milk stopped being a thing after a friend who worked in the almond industry told me how many almonds actually go into a carton — sometimes only about six or about two percent of the entire carton. The rest is water, gums, and emulsifiers. They also put sugar in there. I am not an alarmist, but I am aware that stacking not-so-good-for-you ingredients hurts our bodies years out. I guess you can call me a realist. So what’s a busy gal or guy to do? Duh. I felt so silly once it came to me. It’s so incredibly simple.
Simply soak your nuts in water overnight (I keep mine on the counter). Then, the next morning, drain and then blend in some fresh water. Add whatever else you want to add in and then drink up. That’s right. Let me say that again — that’s it. No straining! No mess. No trashing the fiber. No guilt. No fuss. Every morning for the last six freaking months!
I started with a whole bag of almonds that I soaked, drained, and then peeled. In our culture, we do that with a bowl full of almonds and eat them the next morning. Because I had so many and got busy… I kept the peeled almonds in a glass jar in the fridge in fresh water. And then started pulling them out ¼ cup at a time with 1 ½ cups of fresh water. I’ve done this with walnuts and even pistachios. I don’t even soak very much now, just the exact amount I need for my morning smoothies. The almond and pistachio variations make for an amazing creamy milk base for smoothies. Give it a try and tell me what you think!
