I LOVE LASSI.

It's a delicious drink that is at once tart and refreshing. Though most Indian home cooks make theirs as a thin and savory drink, many restaurants offer a slightly sweeter version. For me, the key is the cardamom. It's the perfect complement to the sweet mango. 

This recipe is from my book Indian for Everyone, turn to page 57 for the recipe.

Blender: Mango Lassi

Makes: 8 servings

Ingredients

  • 2 cups plain, unsweetened yogurt
  • 1 cup milk
  • 3 cups fresh or frozen mango, diced
  • 1 teaspoon cardamom seeds
  • 1-3 cups crushed ice (as needed)
  • 2-3 tablespoons granulated or raw cane sugar, such as Sucant or agave nectar
  • 8 mint leaves, for garnish
  • 1 teaspoon ground pistachios, for garnish

Instructions

  1. In a powerful blender, such as a Vitamix, combine all the ingredients except the mint leaves and pistachios in the above order. Process at the highest setting for 2 to 3 minutes, until completely smooth and slightly frothy.
  2. Transfer to 8 glasses and garnish each with a mint leaf and a pinch of the pistachios. Serve immediately. 

Notes

  • Make this lassi an "adult" beverage by adding 2 to 3 ounces of vodka or rum.
  • Make it vegan: Substitute soy or coconut yogurt and milk alternatives for the dairy yogurt and milk. I make it vegan for many of my cooking classes, and no one misses the dairy!
