My next class is coming up. I'll have your ingredient list up soon and the recipe for all of you to follow along. I have been making this dressing for my family for years. It's at once delicious, easy, and super healthy. You are going to love it!
Recipe:
Silken Tofu Ranch Dressing
1 12 oz. box Mori-Nu Silken Tofu (Soft)
2 cloves garlic, roughly chopped
2 tablespoons unsweetened non-dairy milk (I use almond)
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
1 teaspoon onion powder
2 teaspoons dry or fresh parsley
2 teaspoons mustard powder or dijon mustard
2 teaspoons salt
2 tablespoons olive oil
1/2 teaspoon whole black peppercorns, crushed
1. In a blender or food processor, process the tofu until smooth.
2. Add the garlic, milk, lemon juice, vinegar, onion powder, parsley, mustard, and salt. Process again until blended well.
3. While you are processing, add the olive oil.
4. Once you remove to a jar, add the black pepper. I leave it until we are ready to use for effect, or give it a stir. Store in the fridge for up to 1 week.
