MOM ... THIS DRESSING IS REALLY GOOD. That's all I needed, the affirmation from a teenager on what I already knew. This is a demographic that is brutally honest, after all. This mock Ranch Dressing is one I've made for years and restarted the habit of keeping it in the fridge recently. It's shockingly made from soft silken tofu found in that box at your grocer, typically in the shelf stable aisle. What is amazing about it is that you can take relatively simple and healthy ingredients and make this familiar taste profile that will keep you and your kids coming back for more. The best part is that it will fit into your healthy-eating agenda. You truly need to try it to believe how good it is. And when you do wow your guests - and you will ... do what I do and keep your mouth shut. No one but you and I need know what's in this nor why all of a sudden you're reaching for the 'Ranch'! xoxo Anupy
BLENDER: SILKEN TOFU RANCH DRESSING
1 12 oz. box Mori-Nu Silken Tofu (Soft)
1 clove garlic, roughly chopped
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
1 teaspoon onion powder
1 teaspoon dry or fresh parsley
2 teaspoons mustard powder or dijon mustard
2 teaspoons salt
2 tablespoons olive oil
1. In a blender or food processor, process the tofu until smooth.
2. Add the garlic, lemon juice, vinegar, onion powder, parsley, mustard, and salt. Process again until well blended. As you are processing, slowly add the olive oil.
3. Remove to a jar and store in the fridge to cool until you are ready to use. It will last up to 2 weeks in the fridge. Feel free to add any other spices you would like including ground black pepper, red chile flakes, dried thyme, or oregano.

Thank you for the recipe. It was good, but I found it MUCH too salty for our palette. Will make again, but will definitely cut the salt by at least half.
