MOTHER'S DAY BRUNCH JUST GOT EASIER.
If your mom is anything like me, she loves a good hash brown. I never realized they could be this easy. A few years back, I started making simple hash browns at home by first grating a russet potato and then cooking it up on a well-seasoned skillet with ghee, or clarified butter. I didn't bother adding any flour or eggs as a binder. Instead, on a whim, I just heated the ghee (you can also use a quality oil - even olive) and then added the grated potato.
Just one is enough for two people. I pressed it down, put a lid on it, and let it brown up. Then, the flip and continue cooking until both sides are golden brown and absolutely delicious. I finish it off with Himalayan pink salt and our chaat masala. Honestly, this is the most delicious and addictive thing I make. Give it a try and let me know what Mom thinks!
